Smoked Salmon Scramble

Serves 2

  • 25g butter
  • 3 free range eggs, lightly beaten
  • 3 tbsp milk
  • Salt and black pepper, as needed
  • 2 bagels, halved
  • Butter, as needed
  • 100g smoked salmon, sliced 
  • Finely chopped parsley, as needed

Preparation Time: 4 minutes. Cooking Time: 8 minutes. 

  1. Melt the butter in an AGA non-stick saucepan on the simmering plate, hotplate on simmering setting or induction on medium high until it begins to foam.
  2. Whisk the eggs, milk and seasoning and pour into the pan, stirring continuously until just set and creamy.
  3. To toast the bagels, lay them on the AGA Toaster on the boiling plate or hotplate on the boiling setting. When they are lightly toasted turn over and toast the other side. Alternatively, use your grill. 
  4. Spread bagels with butter and arrange the smoked salmon on top and cover with the scrambled egg. 
  5. Garnish with a little chopped parsley and serve immediately.
