Meringues

Makes 16
- 3 large egg whites
- 180g caster sugar
Preparation Time: 15 minutes. Cooking Time: 2 hours.
- Place a sheet of greaseproof paper or Bake-o-Glide on a large baking sheet.
- Place the egg whites in a large, clean grease-free bowl and whisk the eggs until they stand up in stiff peaks.
- Gradually whisk in the sugar, a spoonful at a time. The mixture should be thick and hold in peaks.
- Using a plain nozzle, pipe 16 rounds onto the lined baking sheet.
- Place the baking sheet in the oven. CAST OVEN: simmering oven or oven on B1 setting on position 3. FAN OVEN: preheated to B1/100 °C/200°F. Cook for 1 ½ - 2 hours until the meringues peel off the paper easily.
- Cool on a wire rack and store in an airtight tin.
