French Canadian Blueberry Toast

Ingredients
- 1 loaf (600g) bread, cut into ½-inch (1 cm) thick
- 3 eggs, slightly beaten
- 1 cup whole milk
- 2 teaspoons (10ml) vanilla extract
- ½ teaspoon (2g) cinnamon
- ¼ teaspoon (1g) salt
- 2 teaspoons (10ml) vegetable oil
- ½ cup (125 ml) maple syrup (Canadian Province of Quebec)
- Icing sugar for dusting
- 1 punnet fresh Blueberries
Serves 8
Method
- In shallow bowl combine the eggs, milk, vanilla, cinnamon, and salt. Dip slices of bread in to the egg mixture, turning to coat. Transfer to a plate.
- Heat oil in skillet over medium-high heat. Cook slices, about 2 minutes turning once. Transfer to a clean plate. Using a knife cut the slices in half from corner to corner forming 2 triangles. Dip (pour on) in maple syrup, and place on a platter.
- Garnish with blueberry and sprinkle with icing sugar or add crème fraiche.
