Ingredients

115g (4 oz) self raising flour

½ tsp cinnamon

15g (½ oz) caster sugar

1 egg

2 tbsp mincemeat

125ml (¼ pint) milk

Rape seed oil

Method

1. Place the flour, cinnamon and sugar in a basin and make a well in the centre. 

2. Add the egg and mincemeat together with half the milk, whisk together and then thin to a dropping consistency with the remaining milk.  

3. Wipe the simmering plate with a little oil on a piece of kitchen paper. Drop tablespoons of the mixture onto the simmering plate, when bubbles rise to the surface, turn over and cook the other side. Keep warm on a plate covered with a piece of foil, or Bake-o-Glide, in the warming or simmering oven.
